Compose each salad in an individual salad plate. Put the chopped salad in the center and arrange vegetables as garnish around the perimeter. I have used trimmed scallions, cherry tomatoes, carrot sticks, and broccoli florets.
For outdoor meals, try grilled fish fillets, chicken breasts, or crab cakes on a "bed" of chopped salad.
